gazpacho, cold soup of Spanish cuisine, especially that of Andalusia. It is an ancient dish mentioned in Greek and Roman literature, although two of the main ingredients of the modern version, tomatoes and green peppers.

gazpacho predates the 16th century arrival of tomatoes (and peppers) in Europe; most culinary historians say that its roots go back to Islamic Spain, sometime between the 8th and 13th centuries. According to Clara Maria G. de Amezua, an authority on Spanish cuisine and founder of the Alambique cooking school in Madrid, gazpacho dates back to the 7th century.

In those days, garlic, salt and bread were pounded in a mortar-like vessel called a dornillo; vinegar and olive oil were then beaten in. The thick soup that resulted has much in common with sopa de ajo, a traditional hot soup that is still eaten in much of Spain, as well as ajo blanco, the cold soup from Malaga also known as “gazpacho blanco,” or white gazpacho.

Yayla çorbası (‘highland soup’), also known as yoğurtlu çorba (‘yogurt soup’), is a Turkish yogurt soup cooked with a variety of herbs (mint, purslane, parsley and others), rice, and (sometimes) chickpeas. Variations of it occur throughout the Middle East.

Miso soup (味噌汁, misoshiru) is a traditional Japanese soup consisting of a dashi stock into which softened miso paste is mixed.

What is a miso paste ?

It’s a combination of fermented soybean, barley, or rice paste, Koji kin (a type of fungus), and salt. Miso is aged for six to thirty-six months. Sound gross? Give it a try!

In addition, there are many optional ingredients (various vegetables, tofu, abura-age, etc.) that may be added depending on regional and seasonal recipes, and personal preference. In Japanese food culture, Miso soup is a representative of soup dishes served with rice. Miso soup is also called Omiotsuke (御味御付).

In 2003, researchers at Japan’s National Cancer Centre suggested that “eating three or more bowls of the Japanese delicacy Miso soup every day could cut women’s risk of developing breast cancer.

Minestrone (Italy)

Minestrone (/mnstroni/; italian: [minestrone]) is a thick soup of italian origin made with vegetables, often with the addition of pasta or rice, sometimes both. Common ingredients include beans, onions, celery, carrots, stock, croutons, and tomatoes.

There is no set recipe for minestrone, since it can usually be made out of whatever vegetables are at one’s disposal. It can be vegetarian, contain meat, or contain an animal bone-based stock (such as chicken stock). Food author angelo pellegrini claimed that the base of minestrone is bean broth, and that borlotti beans (also called roman beans) “are the beans to use for genuine minestrone”.
